Summer Orzo Salad with Asparagus, Cherry Tomatoes and Feta

Ingredients
  • 2 cups orzo pasta
  • 1 bunch of asparagus
  • 1 cup cherry tomatoes, sliced in half
  • 1 and ½ cups crumbled feta cheese
  • 1 and ½ teaspoons dried thyme leaves
  • Juice of 2 lemons
  • Sea salt and freshly-ground black pepper, to taste (I like to go heavy on the pepper for this recipe)
  • 2-3 tablespoons olive oil drizzle, plus 1 teaspoon for cooking the asparagus
Instructions
  1. Cook orzo according to the package. Drain and set aside.
  2. Chop the asparagus stalks into thirds. Heat one teaspoon olive oil in a large skillet and cook the asparagus over medium heat until cooked but still crisp, about 3-4 minutes.
  3. Add the orzo and asparagus to a large bowl. Add the tomatoes, crumbled feta, thyme and lemon juice. Toss all the ingredients together. Season with salt and pepper and drizzle with olive oil.
  4. Serve hot, warm, or cold. It's good at any temp! Oh yeah, and Happy Fourth of July. ;) :)
