Start the New Year Off Right: Barley Salad with Cranberries, Pistachios and Ginger

Ingredients
  • 1 cup organic pearled barley
  • Salt for seasoning
  • 1 teaspoon finely grated orange zest
  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely grated ginger
  • ¼ cup extra-virgin olive oil
  • ¼ cup golden raisins
  • ¼ cup unsweetened cranberries
  • 2 scallions, thinly sliced
  • ⅓ cup roasted pistachios, chopped (if you can't find roasted pistachios at the store, you can roast regular shelled pistachios for 7-8 minutes at 425 degrees)
  • ¼ cup chopped mint
Instructions
  1. Bring a large saucepan of lightly salted water to a boil. Add the barley and simmer over moderate heat until al dente, about 30 minutes or until all the water is absorbed. Stir the barley and remove the pan from the heat.
  2. Meanwhile, in a large bowl, combine the orange zest, orange juice, lemon juice, ginger and oil and whisk to blend. Season with salt to taste.
  3. Add the warm barley to the dressing along with the raisins and cranberries and toss well. Let stand until the barley is almost cool.
  4. Just before serving, fold in the scallions, pistachios, and mint and season with salt.
  5. NOTE: The salad can be kept at room temperature for up to 4 hours.
